The Bikini Cocktail
Makes enough for 10 servings
To make the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Cordial: Place the listed items inside a pan, heat until it reaches a gentle boil, mixing so the sugar melts. Then, remove from the burner and leave to cool down fully. Decant to a sealable bottle, cap it and store in the fridge, where it will keep for around a month.
For the Cocktail Base: Combine all the liquid ingredients into a large bottle, let it rest for 60 minutes, then pass it through preferably using a fine cloth, making it perfectly clear.
For serving: Add 85ml of your cocktail base into your cocktail shaker containing ice, gently stirring carefully for about 60 seconds until cold. Strain to a cold coupe glass or similar, decorate with the cranberries and complete it by giving it a brief mist with the mandarin essence over the drink.
